PEANUT BUTTER COOKIE RECIPE

One of my favorite foods is Peanut Butter!

Naturally, one of my all-time favorite cookies is .. you guessed it .. Peanut Butter Cookies!

Today I’m sharing my go-to Peanut Butter Cookie Recipe, that contains zero refined sugar, and is also dairy and egg free.

PEANUT BUTTER COOKIES

INGREDIENTS

1/2 cup Natural, Creamy Peanut Butter

1 tbsp Unrefined Virgin Coconut Oil, melted

1/3 cup Monk Fruit Sugar

1 cup Almond Flour

3/4 tsp Baking Soda

1/2 tsp Vanilla Extract

1/8 tsp Pink Himalayan Salt

RECIPE

  • Pre-Heat oven to 350 F or 180 C

  • Place all ingredients in a large bowl and mix until well combined

  • Place parchment paper on top of a baking sheet or pan

  • Using a spoon, scoop out cookie dough and roll out 8 large or 12 small cookies and place on baking sheet

  • Slightly flatten each cookie with the palm of your hand

  • Place cookies about an inch apart

  • OPTIONAL — You can go in with a fork to create the infamous lines you see on a lot of peanut butter cookies

  • Bake for 10 minutes — cookies will be golden brown

  • Allow cookies to cool on rack for 10-20 minutes
